Energy Bites {Saw it. Pinned it. Did it.}

Y'all... this girl is tired. The past two nights I have tossed and turned so much in my sleep that even the cat got outta bed. I don't know what my deal is... maybe I'm not tired enough? I'm not anxious about anything or super stressed out... just not sleeping. Which then makes me stupid tired - take today for example, I forgot to put earrings in and my rings on. I never forget that. Ever.

What do you do when you can't sleep??

You know what I do?? Make energy bites! {okay, you got me - I didn't make these in the middle of the night, but maybe I should think about that...}

I've noticed the Energy Bites, Balls, Bars - whatever you want to call them all over Pinterest and I've thought about making them a few times but... never got around to it.

However, in luau of eating healthier these days - and my incessant cookie craving - I thought it was time to give these babies a go...

First discovery, they are stupid easy and quick to make.
Second discovery, they weigh in at about 120 calories per bite. {Which is 120 good quality calories!}
Third discovery, they do taste like a cookie. Like a no-bake cookie without the extra chocolate and sugar.
Fourth discovery, make these. And devour them. {So maybe that's more like an order than a discovery ;)}



Ingredients:
1/2 cup peanut butter
1/3 cup honey
1 1/3 cup oats
splash of vanilla
1/3 cup chocolate chips

{I'd have liked to add flax seeds to this but I didn't have any on hand.}



Put all those ingredients in a bowl, mix until everything is combined well. Then roll into little balls... maybe an inch? I don't know... this recipe made about 14 bites. Put in the fridge for 30 minutes then they're ready to eat! 




I won't lie, I tested the energy bite goo dough while I was rolling them. It was pretty tasty! I don't think I'd add much more to them - I kinda like the simpler things when it comes to sweets. But these completely satisfy my cookie craving {okay, that's a lie - but it's close}. I take two to work with me so I can have a mid morning and mid afternoon sweet treat.

We've made these several times now. I've seen this recipe call for ground flax seeds, though, since they're more beneficial to our bodies that way. We use the whole flax seeds, and it adds a nice crunch. We also replace the coconut with more oats, because I don't like coconut:) Good recipe for a quick, on-the-go breakfast.

We are so obsessed with these at our house!! I add craisins in ours and it is great that way! We have been eating so many of them that I started making a double batch each week.
A friend of mine also swaps out peanut butter chips and nutella for the chocolate chips and peanut butter.
